Quick Easy Gourmet Dinner

Here is a QUICK EASY way to make something SO delicious, nutritious and GOURMET! I took what I had in  the house and in less than 20 minutes, Mario was a HAPPY MAN! I had a small SPAGHETTI Squash that needed to be cooked. I love that I can buy them and they stay for at least 3 weeks! SO I cut it open, scooped out the membranes and rinsed it out. Face side up, I sprinkled turmeric on both halves, and a little garlic powder- tossed in the microwave for 10 minutes. Normally I would have baked in the oven for an hour, but I didn’t have time, and BOY it came out pretty damn GREAT!

In the produce section of Whole Foods, they carry these large bags of pre-rinsed and chopped Kale! SO I am in HEAVEN each time I can buy two big bags! Each bag is 16 oz. 2.5 cups of kale has 45 calories! Are you kidding me! I could eat two whole bags! YUMMY! Look how big the bag is! 
 
Again, with what I had in my fridge, I wanted to get creative and make something worth BRAGGING and eh-hmmm, Blogging about!  
GREEN GODDESS Kale Saute.
Ingredients:
  • 8 oz kale
  • 4 cloves garlic (we LOVE GARLIC)
  • 1 cup chick peas
  • 10 pitted kalamata olives diced
  • 1/3 diced white onion
  • 3 large diced portobella mushrooms
  • sea salt
  • 2 tbsp.grape seed oil
  • 1 tsp. truffle oil
 
Directions:
In a large frying pan, heat 2 tbsp. grape seed oil on medium heat. Add the onion & garlic and sauté for about 3 minutes or until onions are caramelized and light brown. Add the Portabella mushrooms and sauté for another 3 minutes. Add the diced kalamata olives, and chick peas and sauté 3 minutes before you ass the kale. You MAY have to add the kale a little at a time. Even though it’s chopped, it still takes up a lot of room, until it steams a little.  Mix well all of your ingredients until the kale is coated nicely with the grape seed oil and other ingredients. Right before it’s done, about 8 minutes, drizzle 1 teaspoon truffle oil and mix all together.
 
Once the kale Saute was done, I kept it covered, shut the flame and started Mario’s filet mignon. Another easy thing to make! Take a small frying pan and spray a quick spray of olive oil to the pan. get it really hot, and add the filet. Cook over medium to LOW heat for about 6 minutes on each side- Mario likes his filet still alive! EEEK!  
 
 
 
I pulled the spaghetti squash out of the oven, and forked out Mario’s half.  Here you have a fabulous FIT GREEN GODDESS meal in UNDER 20 minutes! I was going to make an egg white and kale omelet but after making this dish, I decided it was great all by itself!
 

 

This is DEFINITELY a dish to BRAGG about as well as BLOG about!
