Protein Pumpkin Pancakes

Going through my old blogger  blog, I wanted to pull my great recipes before I delete the blog for good. This recipes seems fitting since fall is almost here and pumpkin season is upon us! I hope you enjoy this!

Ingredients:

1 can Organic Pumpkin

4 egg whites

1 scoop vanilla protein powder

cinnamon

1 cup old fashioned GF oatmeal

pumpkin pie spice

pepitas

coconut oil

Sun butter

blackberries

  Directions:
1. Open can of pumpkin and add to your vitamix or blender
2. Crack open your eggs and add them next.
3. Add your Vanilla and oats next.
4. add the cinnamon, pumpkin spice and pepitas.
5. On your frying pan, add the coconut oil, but make sure it’s VERY HOT. Once hot, turn flame to medium. At the same time you are blending your ingredients in your blender or vitamix.
6. Spoon out a heaping tablespoon for each pancake. My recipe made about 13 pancakes.
7. Once your pancakes are done,  top each one with some sun butter or almond butter and serve with 5 or six blackberries.
