Kale & Lentils

Quick Recipe for you! I had 40 minutes to get a great piping hot dinner on the table for Mario, so with that being said, I had to hustle! I am notorious for giving my husband the most amazing meals each night, so 40 minutes doesn’t give me a lot of time! I knew I had enough food in the house to come up with SOMETHING!

Here you see my FAMOUS BIG OL’ BAG of KALE! SO OBSESSED! I have EVERYONE buying it! 

I had a can of organic no sodium Lentil beans, tomatoes, onion and garlic…Oh and some shiiritake mushrooms &  Veggie NO sodium broth. I preheated the oven to 400 degrees, lined a baking sheet with parchment paper. tossed in the Chilean Sea Bass, squeezed and rubbed a FRESH lemon on top sprinkled sea salt & black pepper and tossed in the oven. 
Meanwhile…The Fit Green Goddess had to sprinkle her green fairy dust in the kitchen and GET TO WORK on the stove top!

I pulled out my frying pan, and tossed in a tablespoon of grape seed oil, and sauteed the onions & garlic. Once light brown, I added the mushroom and sauteed for 5 minutes more. Tossed in the kale, little by little mixing it well into the onions, garlic & grapeseed oil, I used 1/2 a bag. At the end, I poured in 1/4 cup broth & the can of lentils which I rinsed off VERY WELL first.  I covered, it simmered and Guess what happened next……. 35 minutes later, Mario walks in…. the timer for the fish goes off, and dinner is SERVED!
