Ground Buffalo Meat Sauce

THIS WAS SO DELICIOUS! I think I am going to make this once a week! Usually on Sundays Mario wants a big Italian SLOW cooked meal. He picked up ground 90% fat free sirloin so I could make home made meatballs. While I made him the yummiest meatballs, I kept thinking about what I would eat since I don’t eat COW meat- GROSS! Then I realized that I had some ground 90% fat free buffalo- which is so extremely healthy, more lean muscle on a buffalo than a cow and the taste is so much better! NOT gamey, chewy or funky in any way! Just taste like fresh lean red meat. With the sauce I made Mario, I tossed some in my ground buffalo and BAM!  Look at this delicious meal!

Recipe:

  1 tsp. olive oil in a small frying pan
1 clove garlic chopped (I like mine big)
4 cups baby Kale 
5 oz ground buffalo
1/4 yellow onion- Diced chunky
Italian Seasoning

How to make:

While you are boiling water for your BROWN RICE PASTA….
1. Sauté the olive oil and garlic until light brown.
2. Add the buffalo and sauté for about 5 minutes on medium heat until there is NO pink in the meat.
3. Add all of the baby kale, and sauté for about 10 minutes on LOW- medium heat.
4. Add your tomato sauce and seasonings and mix well.
5. Simmer on low with cover for 10 more minutes, or until your pasta is ready.
Serve on top of brown rice pasta (1/2 cup- pasta & ALL of the buffalo meat sauce on top).

This has GOT to be one of my FAV’s! The kale gives you your greens and minerals, while the tomatoes give you your lycopene and vitamin C, the buffalo gives you an INCREDIBLE source of SUPER LEAN and CLEAN protein, and the brown rice pasta- I think of it as a FILLER, and a Cheat. The rest of my week will include NO GRAINS, NO CARBS from anything processed. Meaning, I will have yams and squash to replace my grains.
