Bad- Ass Buffalo Chili

BAD ASS BUFFALO CHILI!

1/2 head Cauliflower
4 carrots- peeled
2 cans organic NO SALT Kidney Beans
1 green pepper diced
1 8 oz container of mushrooms
1 small onion diced
1 15-oz can SAN MARZANO tomatoes
1 8-0z can diced tomatoes
2 cups VEGGIE broth
1.5 lbs. Ground Buffalo
Cilantro- A TON!

Garlic powder- To taste
Apple cider vinegar- 2 tbsp.
Ground Cumin- to taste
Chili powder- To taste
Borsari- THE BEST SEASONING!

 Heat a large pot until very hot. Add the ground buffalo and cook until it’s brown frequently stirring. It will take about 8 minutes. Add onions and carrots and cook until they feel soft- about 6 minutes. Add 1/2 cup water……and stir.

Add cauliflower, green pepper and garlic for about 6-7 minutes, or until soft.
You can now add the cumin, chili powder, apple cider vinegar, tomatoes, kidney beans and veggie broth.  Stir occasionally for about 10 minutes. 

 COVER, SIMMER and let cook on low heat for about 45 minutes.

 I served it for Mario over Quinoa. You can serve over Forbidden Rice, Quinoa, brown rie pasta….
